1 large free-range chicken, giblets removed 1/2 cup tarragon, leaves roughly chopped 1/2 cup butter, at room temperature 3 heads of garlic, halved horizontally Olive oil, for drizzling Sea salt and freshly ground black pepper Stuffing 2 tin cooked chickpeas, drained and rinsed 1 lemon, zested 3 thyme sprigs, leaves only Olive oil
